Recipe | Low-Cal Muffins


Ingredients per batch:

Coconut Flour

1/2 tsp
Baking Powder

Baking Soda

Cinnamon

Banana

Egg Substitute

3/4 cup 
water


Directions:
Mix dry ingredients in a bowl and stir to combine.  Add banana, egg substitute and ¼ cup water to blender and mix till smooth before pouring into the dry mixture with the last ½ cup water.  Mix until fully combined.  Batter should be firm/wet mixture that will somewhat hold up on a spoon.

Divide equally into individual cups and bake in a 350 degree oven, testing with a toothpick after 25 minutes.  May take 35 minutes for larger cups.  

Makes 6 regular cupcakes and 12 to 16 mini cupcakes
